A former food business which traded as Zinga Indian Restaurant in Gnosall has been ordered to pay £30,700 following a prosecution over food hygiene failures, Stafford Borough Council has announced.
The council said Gnosall Limited was fined £20,000 at Cannock Magistrates Court, with £2,700 in costs and an £8,000 surcharge. The offences related to January and February 2024.
According to the council’s account of the case, guilty pleas had previously been entered to six offences. These concerned food safety management, training for food handlers, handwashing facilities and three failures to comply with Hygiene Improvement Notices.
Inspectors found dirty chopping boards, poorly cleaned kitchen surfaces, cracked and dirty food containers and no hot water at the staff handwashing basin, the council said.
A later visit found continuing cleaning problems, uncovered food below a preparation area and no properly functioning handwashing basin.
The council described the company as a former food business. The case concerns the company and conditions in early 2024; it should not be read as an assessment of any current operator or present-day hygiene rating.
Councillor Ian Fordham, Cabinet Member for Environment, said the authority wanted businesses to succeed while meeting standards intended to keep diners safe.
Current published food hygiene ratings can be checked using the Food Standards Agency’s ratings service.
